Taquito Time
    1. If using canned beans – cook beans with 1/4 cup water or vegetable stock, onion, garlic, and seasonings for about 15 minutes until flavors are absorbed and beans are tender. If using dry beans, follow directions in post. Once cooked, mash beans with a potato masher leaving some beans whole.
    2. Preheat oven to 400. Lay out a tortilla, insert about 1 1/2-2 tbsps of bean mixture and roll it up. Place on a baking sheet seam down. Repeat until your tortillas and beans are used. Bake in the oven for 20 minutes until the taquitos are slightly brown and crispy. Serve with some guacamole or salsa and enjoy!
