Broccoli and White Bean Soup
    1. Steam the broccoli until tender and set aside. Save few small florets for garnish if desired. Peel and chop potato into small cubes, set aside. In a medium/large pot, saute garlic with a little olive oil for a few minutes until it becomes fragrant. Add in potatoes, vegetable stock, and seasonings. Allow this mixture to simmer for 15/20 minutes until potatoes are tender. Add in drained beans and allow to simmer another 5 minutes. Remove bay leaves from the mix. Using a blender or food processor, incorporate the bean and potato mixture with cooked broccoli. Garnish with some broccoli florets and sunflower seeds. Enjoy!
