Steam the broccoli until tender and set aside. Save few small florets for garnish if desired. Peel and chop potato into small cubes, set aside. In a medium/large pot, saute garlic with a little olive oil for a few minutes until it becomes fragrant. Add in potatoes, vegetable stock, and seasonings. Allow this mixture to simmer for 15/20 minutes until potatoes are tender. Add in drained beans and allow to simmer another 5 minutes. Remove bay leaves from the mix. Using a blender or food processor, incorporate the bean and potato mixture with cooked broccoli. Garnish with some broccoli florets and sunflower seeds. Enjoy!
