Meatless Monday: 3 Bean Chipotle Chili

Ingredients
  • 1 can Kidney Beans
  • 1 can Cannelloni Beans
  • 1 can Black Beans
  • 1 can Crushed Tomatoes
  • 1 can Diced Tomatoes
  • 1 Chipotle Pepper, seeded
  • 2 tsp Adobo Paste
  • 1 tbsp Cumin
  • ¼ tsp Red Pepper Flakes (optional)
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 Bay Leaves
  • 2 tbsp Tomato Paste
  • 1-2 cups Vegetable Stock
  • 1 tbsp Cooking Oil
  • ¼ tsp Salt
Instructions
  1. Sauté the chopped onions and crushed garlic in cooking oil for about 5 minutes, until they start to soften and become fragrant. Add in cumin, and red pepper flakes if using, and sauté another minute or so.
  2. Rinse and drain the beans. Remove one chipotle pepper from a can of chipotles in adobo. Seed and chop this pepper.
  3. Add all remaining ingredients to the pot, and bring to a boil.
  4. Reduce to a simmer, and allow to cook for about 30-40 minutes.
  5. Top with chopped avocado, serve and enjoy!
