Summer meets fall in this simple, yet healthy and tasty pumpkin spiced pineapple squash breakfast smoothie. I drink a smoothie pretty much every day for breakfast, a smoothie which normally consists of the same exact things, berries, a banana, some supplements, and coconut water, but today, I wanted to make something a little different, and a little bit crazy!
So I used squash! Yes, squash in a smoothie. I wanted to take all the classic fall flavors, and remake them. So I started writing down a few ingredients, and a few more came to me, and voila, you have my pumpkin spiced squash smoothie, which really is a perfectly refreshing, morning treat.
To make this smoothie, I tested out my newest kitchen toy, a KitchenAid Immersion Blender which has made my smoothie making really simple. To use the immersion blender, I simply load up the provided cup, or any bowl or large cup, with the ingredients I want to use, and then I stick the blender inside and blend until smooth. This fun little toy also works well with pureeing hot soups, and really anything inside a large bowl or dish. I have found it quite handy in the morning to make my breakfast smoothies. So far, it crushes up everything just as well as my blender, but does take a little more effort to crush up the frozen fruits. I like this immersion blender, it’s simple and to the point, but also not too expensive.
So, you’ve never made a smoothie with squash before? Well, neither had I, but squash is sweet and starchy and perfect to use as a healthy thickener. I used cubed frozen butternut squash, but if you have some plain squash leftover from dinner, that would work well here too. Other varieties of winter squash could be used here instead, such as acorn squash.
For the smoothie, I wanted to bring together the classic pumpkin spices to feature the fall season, and to provide more flavor to the squash. Then I used some coconut milk to make the smoothie creamy, and some pineapple to make it fresh and sweet. The smoothie turned out really well, actually better than I thought, and is a fun alternative to a seasonal coffee or tea.

- ½ cup frozen cubed Squash (or cooked fresh squash)
- 1 cup chopped Pineapple
- ½ inch Ginger
- ¼ tsp Cinnamon
- ½ cup Coconut Milk
- Place all of the ingredients in a blender, and blend until smooth adding in additional water, or coconut water, if the smoothie is too thick.
