This recipe is great because you can enjoy these stuffed avocados for breakfast, lunch, or for dinner – blinner if you will.
The mix inside is pretty simple, think baked guacamole –
1 fresh tomato
1 yellow onion
1 tbsp chopped cilantro
1 tbsp lime juice
1 tbsp red chili flakes
Salt to taste
Mix these ingredients together and set aside. Cut the avocados (I used 2 avocados and made 4 stuffed pieces) and scoop a little bit of the avocado out just to make a nice bowl shape. (I just eat that extra avocado, or you can put it aside for later. Avocado is a welcome addition to eggs dishes, salads, soups, etc.) Anyway, stuff the avocados with your tomato and onion mixture and top with some crispy bread crumbs.
Bake in the oven at 375 for 10-15 minutes until the bread crumbs are crispy.
These would also taste great with the addition of some crunchy bell pepper or some sweet mango. Enjoy!
